Restaurant Style Salsa

Ingredients

  • 1 (28 oz) can whole tomatoes with juice
  • 2 (10 oz) cans Rotel diced tomatoes with green chiles
  • 1/4 C chopped onion
  • 1 clove minced garlic
  • 1 whole jalapeño, quartered and sliced thin
  • 1/4 tsp sugar
  • 1/4 tsp salt
  • 1/4 tsp ground cumin
  • 1/2 C cilantro, more if desired
  • juice of 1/2 lime

Instructions

  1. Combine all ingredients in a blender or food processor.
  2. Pulse until you get the consistency you prefer (10–15 pulses).
  3. Test seasonings with a tortilla chip and adjust as needed.
  4. Refrigerate salsa for at least an hour.

Note

This is a very large batch. Recommend using a 12 cup food processor, or you can process the ingredients in batches and then mix everything together in a large mixing bowl.
