Ingredients

First dredging

  • Flour
  • Seasonings to taste
    • Sea salt (be generous)
    • Pepper
    • Paprika
    • Cayenne

Second dredging

  • Flour
  • Panko (half as much as flour)
  • Same seasoning as before

Instructions

  1. Dredge thawed refrigerator temperature chicken through your flour mixture, coating it very well
  2. Refrigerate for 1–4 hours
  3. Dredge again with the flour/panko mixture
  4. Set aside for a minute or two before dropping in the oil
  5. Cook for 3–4 minutes

Note

Fill the pot about halfway with oil and heat to 350 to 375 degrees. When you add the chicken, the temperature will drop. Keep it at 300 to 325 degrees while the chicken fries.
