Dutch oven cooking is usually done with barbeque briquette charcoals. A good quality briquette works best for consistent heat and ease in lighting. 12 inch (6 quart) ovens are the most common size.
- Fill the pan you’re going to use 2/3 full with water
- Bring the water to a full boil
- After 10 minutes, check to see if the temperature of your thermometer reads 212° F
If your candy thermometer is off, subtract or add the difference to your final cooking temperature.
For example: If your candy thermometer reads 210° F in boiling water, you’ll want to cook the candy to 246° F, not 248° F.
